I LOVE this recipe! Living alone, I can make on the weekend and freeze them for a great breakfast during the work week I used bulk turkey breakfast sausage and have also used diced turkey breakfast links as I don't eat pork. Thank you for a winner!

Lovely Brunch dish. These would work well on a buffet too. I made a third of the recipe with no problem. I filled the muffin tins to apprx 1/2" from the top - they puff right up. I used a Jalapeno pepper instead of green pepper and would like some hot sauce on the side. But that's just me - they are wonderful without it. Nice texture. Excellent do ahead recipe. I browned the sausage the day be fore, but them together a couple of hours before baking them - popped them in the oven 25 minutes before serving - timing is just right. Thanks gran, great recipe

I ate these often when no-carbing. Try subbing different meats and veggies. My fav is ham and broccolli. And they are great cold!

These little muffins taste fantastic! I didn't worry with using sausage patties or links instead I scrambled the sausage in a pan. I was a little disapointed because the egg stuck to the paper muffin liner. Next time instead of using the paper liner I will grease the muffin tin.

My family thought this was a great recipe. It definitely needed the green peppers though, which I left out because I didn't have any. I also found that the muffins overflowed the tin, and made a big mess of my oven. So next time I will use two muffin tins or cut the recipe. I will also add some tomatoes and maybe mushrooms too. Overall, a very good recipe. Thanks!

Wonderful. I froze them and my husband and I just reach into the freezer zip-lock bag and zap and eat. I am also going to make them ahead of time and freeze them for camping. Thank you.

I don't know what happened but these did not turn out well for me. I greased the pan well and they stuck horribly. A nightmare to clean the pan. They weren't very muffin-like, but flattened out and were more like little scrambled egg discs. Oh well, things don't always turn out like you expect and from looking at the pictures and reading the other reviews, I must have been off my game.

These muffins were absolutely wonderful and VERY easy to make. My husband took two of them to work on his way out of the house and immediately called me upon eating them. He begged me to make them on a regular basis. (He ate two more for dinner later that evening. NOTE: I reheated them in the microwave for 30 seconds). I did make some changes to the recipe: my husband is not a fan of onions and green peppers, so I omitted these ingredients, as well as the garlic powder. Also, since it's just the two of us, I halved the recipe to 6 eggs, but kept the same amount of sausage and cheese. On day two of making them, upon request, I used 1 cup of cheese. Lastly, I used Jimmy Dean pork sausage with maple. Thanks Nicole for a quick and tasty (low carb) breakfast! They were delicious!!!

I really liked these a lot. I didn't have any pork sausage so I used Canadian bacon. Next time I may try regular bacon because I am not keen on sausage meat anyway. They DO stick so be careful, even though I greased my muffin tin very well. I wonder if you could do these in those paper muffin cases - just a thought - maybe try that next time. Any way despite sticking they are most excellent!

These egg muffins were easy to throw together and baked up nicely. I cut the recipe in half and got 7 muffins...but I should have made it 8 since one overflowed a bit. I would definitely not fill any of the muffins more than 2/3 full. I did expect the muffins to have more flavor. I left out the green pepper since I don't like it, so that could have added to the problem, but given that I love scrambled eggs and all of the other ingredients, I was surprised at how plain these tasted to me. It was a great idea, but I think I'll stick to making regular scrambled eggs since it only takes a couple of minutes to throw that together.
