Excellent recipe and very very easy to make! I've been searching for a good non-dairy pancake with all natural ingredients. This one hits the spot and doesn't taste like it's missing anything. I used only 1 1/2 cups water and they turned out light and fluffy. Delicious!

Ooh these were excellent. I just made them for my family and they loved it. I didn't have cinnamon applesauce, so I used regular applesauce and added in 1 tsp of cinnamon and instead of 2 cups water I used 1 1/2 cups. They taste great with maple syrup!

Pancakes were light and yummy! I cut the recipe in half and used splenda instead of sugar. I counted 5 WW points for the nine pancakes it made! Served with sugar free syrup and they were delicious!

These are by far the best low fat pancakes EVER! I made 9 medium-sized pancakes and had a few left over so I put them each in a plastic baggie and put them in the freezer. The next morning I put them in the toaster and they tasted even better than when they were fresh! I also had plain applesauce so added about 1 tsp cinnamon.

These were great. They rose up real nice. I froze the leftovers and look forward to having them heated in the toaster. DH liked them very much.

These turned out great! I loved how you could smell the cinnamon in them and how there was that subtle taste of apple/cinnamon as well. We have recently discovered our son has allergies to milk, egg, and peanuts, so it has been a struggle to find foods for both he and I since I am also on the new diet for bfing.
