I was really skeptical about this recipe but had to try it and the muffins are wonderful! My additions to the basic recipe (with yellow cake mix) were: 1 teaspoon of pumpkin pie spice and 1/2 cup golden raisins, which I moistened with orange juice and heated in the microwave until juice was absorbed and raisins were nice and plump. I love these and will definitely make them often for friends and family.

I thought they were very good. I just added 2 tsps. of pumpkin pie spice to pick it up a little.

I tried this with chocolate cake mix and it came out great!! Is a nice lowfat snack when you are craving something sweet

All I can say is AWESOME! I topped my muffins off with a mixture of finely chopped walnuts, cinnamon and brown sugar. These were so tasty, and actually really low in fat and high in fiber! I have to admit- I was one of the skeptical ones. I also thought that they would be dry. But NO WAY! MOIST MOIST MOIST! Thank you so much for posting this recipe!

Absolutely delicious!! I took the advice of the other raters and added the pumpkin spice and raisins (moistened with orange juice in the microwave). I only had one muffin tin so I made a loaf with the remaining batter and frosted it lightly with vanilla frosting. Thank you for sharing.

too easy! i used a spice cake and baked in a loaf pan for about 50 minutes. thanks for posting - turned out very good!

I'm really impressed with this recipe...it is SO VERY MOIST! Used Betty C's Carrot Cake mix, and used the streusel topping from #19484. Needed something in a rush for a birthday luau this afternoon and this filled the bill--tho' only 11 will be going on the buffet table — we had to share the 12th (they are very large) to make sure they were good enough!

I kinda changed a few things, but not because I wanted to, I had too. I had a can of sweet potatoes not pumpkin (my mistake) and I added some allspice,pumpkin pie spice and nutmeg, 1 tsp each. Plus I sprinkled some sugar on top before baking. and.... OH my are they ever good. This recipe I will keep for sure. Next time I will follow to the T, but either way ti is a good recipe and so EASY !!

I make these often with spice cake mix, using a mini muffin tin. My daughter loves them! Make sure to use the small can of pumpkin, not the large, or they will be gooey.

I made these this morning to bring to class and I am amazed....for having just 2 ingredients, these tasted pretty darn good. BRING ON THE COFFEE.....thanks for sharing. I definitely will be making these again!!
