We had such a big dinner last night that I haven't really been hungry all day today, so have snacked a little here and there. Tonight I felt I needed a good meal, but wanted something light. DH raided the fridge early on and snitched a wedge of last night's left-over Great Round Reuben and didn't want anything else. I cut this recipe in half thinking it would be way too much for us. Boy, I wish I would have made the whole thing now. I had a bowl along with some of Inez's [recipe=31382]Poppy Seed Muffins[/recipe]. They were both delicious and went beautifully together! There is just enough soup left-over that I will be reheating it for a side dish for tomorrow's dinner. Thank you for sharing a really terrific and easy recipe Eve!

I am a vegetarian so I decreased the milk and used veg broth in it's place then added onion powder, black pepper, kosher salt and a tiny bit of red pepper before blending.
FABULOUS! And...the best part is, I've hated asparagus all my life but I love this! I'm so happy....this was so easy thanks for posting!

Wonderful soup! I wanted something warm and delicious, and this fit the bill. I halved the recipe because I only had 1 lb of asparagus. I used 2 cups of low fat milk, and 1 cup of no fat half-and-half. I used my hand held blender, and the texture was perfect. This is definitely a keeper! I will be making this again.

Really good! Lots of fresh asparagus. Used my immersible blender instead of the food processor & added a dab of sour cream with freshly ground black pepper for serving...see picture. Thanks.

MMMMmmmm!!! Asparagus has been on sale so I've had a LOT on hand and wanted to try something different with it! I served this with homeade whole wheat bread sticks and a light salad. SUPER! I will definitely make again!

very quick and easy to prepare. the flavor was delicate with chunks and flecks of the asparagus floating around. this was a side dish along with dinner and i had some left over for lunch the next day, too.

I wanted a simple soup that would really show off the delicate flavour of asparagus, and this was it. I imagine that this would also be good served chilled in the summer. Thanks for posting this recipe!
