Very nice dish, Toni! I used one green and one red pepper. I had to use kidney beans instead of cannellini beans, but it made it colorful and tasted great. The only thing I'll do different next time is add some red pepper flakes for a little zip. Made for ZWT4.

Wonderful flavor and simple to prepare. My DH doesn't care for beans generally (and actually turned up his nose when I added them), but I think the cannellini beans really set this recipe off. They add a creamy richness to the dish. (BTW DH took the leftovers for lunch the next day). I made this recipe as written except, since we were doing other things, I let it simmer longer and it still turned out great. Thanks for a great recipe.

Great Chicken Stew, loving Tuscan recipes this recipe made for a wonderful meal.(yes it looks a good as it tastes!) Other then using chicken breasts I made as written and we enjoyed every bite! This is one recipe that will be seeing a good many makings in our kitchen. Thank you for sharing.

Very simple and satisfying! I used 1 red pepper and 1 yellow, as that was what was on hand, and the stew was so visually appealing! I made it the day before serving and was real glad I did, because the flavor improved enormously after sitting in the fridge overnight. Along with a tossed green salad and garlic cheese toast, this made a lovely meal on a wet and gloomy November night. Thanks so much for sharing, Toni!

Nice, healthy stew! I'll definitely make this again! I skipped the peppers (not a big fan), added some spinach, green beans, and crushed dried Rosemary. This made a very hearty meal! Thanks for the recipe!
