This is a great recipe for those who do not like zucchini! I followed the recipe except that I used italian seasoning rather than just oregano. It was very tasty! I had a bit too much butter and they were a tiny bit soggy, so it may take a time or two to get that right considering the zucchini sizes vary. Overall good recipe.

    I thought this recipe was fantastic! My husband thought they should be a little more crunchy, so next time I will either increase the time, or broil for a few minutes at the end to give them a bit more crunch. Thank you!

    INCREDIBLE! I honestly do not know what else I can say! My man isnt a veggie person, but he couldnt get enough of this and has asked me to make it over and over again! thanks for sharing!

    We loved this!! My husband has been bugging me to find some good veggie recipes and this is definitely one of our favs! The parmesan and zucchini mix is very yummy. Thanks for sharing

    I don't usually eat zucchini, but I had some that I wanted to use and found this recipe. I LOVE it! I went out and bought more zucchini just to make this. I cut mine very thin and tossed with EVOO. Once I had them in a single layer I sprinkled seasoned salt, garlic powder and parmesan cheese over it. Mine didn't need a full 30 minutes, I just checked on them until they were nicely browned. They are delicious! I even make them for snacks now.

    YAY! These were great. I'm no longer forgoing zucchini every summer just b/c my hubby doesn't like it. I bought zukes for me and made this recipe as one of our sides with dinner tonight-yum! 5 stars ALL THE WAY for taste, simplicity and a new veggie staple in our house! I did halve cherry tomatoes and throw a handful of those in, which were quite nice, for my hubby. I think you could get away with half the cooking time, next time might start checking after 20 min. Thanks again!

    I had to change the recipe just a bit. I only had one zucchini, so I added 3 yellow squash to the mix, creating the same volume as the 2 zucchini called for. I was very pleased with the visual outcome, the green mixed with yellow was very pretty and the squash worked out fine as far as texture and taste goes. I was unhappy with the oregano. I felt it overpowered the zucchini and squash, so unless you just LOVE the taste of oregano I would cut down on that. I am not giving up on this recipe yet, but the next time I make it I am eliminating the oregano completely and substituting with less something powerful. I will also continue to mix the yellow squash in.

    Who knew zucchini could be so yummy! So easy to make and takes no time. Make sure you put enough butter because if you don't they burn really badly - still tastes good but just a little crisper. Thanks!

    This was good! I cut my zucchini too thin, so they ended up looking kind of wrinkled, but tasted good! I used oregano, garlic powder, onion powder, a little parsley-just to mix it up. A great recipe!
