Great for the slow cooker. As other reviewers have said, the quantities for the liquids in the recipe are a bit light. I eneded up using 2 cups of Guinness and probably 2 to 3 cups of beef stock so that everything was covered in the crock pot. As I serve it on mashed potatoes, I didn't use potatoes in the actual recipe but used a turnip, a swede, a parsnip, a sweet potato and about 4 medium carrots. Next time I'll add a bay leaf or two as my good friend and chef Browndog said that this would take any acidity out that may come from the stout. Thanks for posting - loved it!

I made this with 5 carrots, 2 turnips, and three red potatoes (not peeled). Overall it turned out very delicious though I did have to increase the amount of broth and Guinness to completely cover the meat and veggies. I also added some butter/flour at the end to thicken the broth some, it was a little thin for my taste.

Never had Irish Beef Stew before, but I decided to try this recipe for St. Patrick's Day. It turned out well (didn't need to cook for the full two hours, maybe because I cut the meat and vegetables too small?), but I think I prefer "regular" beef stew. This was nice for a change though.

This was really good. My husband made it for dinner last night. We did add 2 cups of broth and a whole can of the Guinness draught so that veggies were covered with liquid. Also added a little flour water mixture to thicken the sauce up a bit. It only took about an hour and a half but he cut the veggies into smaller pieces. Great stew!!!

Made this last night...it came out GREAT. The meat melted in our mouths. I didn't have any Guinness and had to use regular beer increasing the amount to 2 cups but other than that I made no changes. I will definately be making this again. Thanks!!!!

I chose this to make for the Eire part of Virtual cruise:British Isles & Ireland and I was glad I did. It was simple to make and the end result was really tasty. I did not add the Guinness - personal preference, but the gravy was tasty all the same and the beef melted in your mouth.
