DiB's, thank you for a wonderful recipe. I used unpeeled potatoes (but peeled the carrots), regular (not cooking)extra dry sherry wine, and cooked it in the ceramic crock from my crockpot in the oven at 325 degrees---I forgot to stir it and when I went to check on it, found it to be done at 3 1/2 hours. I really enjoyed the very savory aroma emanating throughout my house, and the taste is perfect---I wouldn't change a thing. Served it with "Irish Rosie's Irish Soda Bread" (Irish Rosie's Irish Soda Bread) and butter--what a delightful St. Paddy's meal.Thank you!

What an easy peasy, bowl of yumminess! I made this in the crockpot, instead of oven, on low for about 4 hours. Peeled the carrots but not the potatoes. Also, used a shoulder chuck which turned out very tender w/out losing its texture as I think a more expensive cut would be apt to do. My hubby is not big fan of stew but had three helpings of this stuff! It was great the first day and outstanding the second. It didn't last a third day. Loved it!

We thought this was wonderful. Next time I will double the recipe though. I did add more liquid during the cooking time. Thanks for a great winter recipe.

It is St. Patty's day, and I just got finished with the best stew I have personally ever eaten! My family devoured it all! I wanted to try something other than the traditional corned beef and cabbage routine, and this was definately it! Thank you! LA

This was a big hit at our Sunday St. Pattys day dinner...I used red wine instead of sherry and put a little minute tapioca in it and cooked in my crockpot...wonderful rich stew....

Thanks Di for suggesting this recipe in using up a chuck roast! The stew was hearty and delicous. I found it was done after only 4 hours. I loved the fact that once all the ingredients were prepared, I could just put it in the oven and forget about it while I was busy with other things. This one is going in my permanent cookbook.
