I have made a version of this dish for several years. Tonight, I prepared it with sliced zucchini instead of the yellow squash as a side to some grilled steaks. My hubby loves it. I have added sliced mushrooms and even a chopped tomato near the end of cook time to make a bit of a sauce on the veggies. This is always a favorite at our house.

We enjoyed this recipe. I added some mushrooms. I didn't have any morton's nature seasoning, so I just used salt and pepper. The recipe still turned out okay.

Guess what? I couldn't stop eating this either. For something so simple, it really delivers on flavor. I was able to find the Morton's seasoning, but did not have roasted garlic (or the time to do so), so I just added regular garlic, which was fine. I like the suggestion of adding mushrooms and may do that again. I also used 2 medium zucchini and a 6-oz. bag of baby spinach. The result was delicious! Thanks for posting this.
