I used this marinade on a top sirloin with the idea in mind that it might help with flavor & texture on a cheaper cut of meat. Oddly enough, I was out of worcestershire, so I just used A-1. Seemed to work fine. i used a very coarse grind of English mustard and marinated for over 24 hours. The flavor was one that I really enjoyed, strong flavors but not too salty. Will keep this in the rotation for cheaper cuts of meat.

Well, based on all the rave reviews, we did a Kittencal-only dinner tonight. Unfortunately, I must disagree with this being the "perfect" steak preparation. Turning it four times kept any true searing from occurring, so the steak ended up being just sorta beige-y - no grill marks to really speak of. Between the worcestershire, soy, and dijon mustard, it was way too salty for our tastes, and the vinegar just introduced a really jarring note to the whole thing. Sorry, but it was a disappointing steak.

Grand slam marinade! We all LOVED it! Marinated for about 6 hours then grilled on high heat to sear in the juices. So delicious!

I have had this twice now and I loved it each time! This is my favorite steak! The second time I cooked it we had to cook it in the oven, we had literally just ran out of propane. So what we did was get a baking sheet pan lined it with the cooking cooling rack and put the steaks on that. (using a nonstick coating on the cookie sheet of course) Turned the oven on to 450 and it cooked for 20 minutes for an almost perfect medium well. It turned out great. Great recipe, have used it frequently for pork chops as well as steaks. I also use this for venison steak and tenderloin but I add a couple tablespoons of brown sugar and dried red chile flakes to taste. The brown sugar really helps cut the "gamey" taste.

I halved this recipe and stuck it in a bag with two sirloin steaks I poked the heck out of with a fork. Left them on the counter to come to temperature for almost two hours (kitchen is still fairly cool) and they were indeed perfect. Thanks for posting!

I have used a number of marinades for steak, pork, and this is by far on top of the list!!! although you state to turn the steaks oftem, NEVER turn steaks more than once. place the steaks at 45 deg and turn half way through the first half to get those perfect grill marks! repeat on the other side. Remember pre-heat the grill on hign for at least 15 minutes then cook the steaks on Med-High! Thanks again for another fabulous recipe!!
