I am a born and bred Louisiana Cajun girl and this is hands-down the BEST black-eyed pea recipe I have ever tried. Even my skeptical husband (who normally will only eat red beans and rice) RAVED about this dish! I believe the secret is in using the chicken broth. The only thing different I did was used a pound of dried beans (quick soak method where you boil the peas in water covering them by 2 inches for a minute and let them soak for an hour- discard the excess water and proceed with the recipe as is), added a green bell pepper, used Tony Chachere's creole seasoning instead of salt & pepper, added several dashes of Tobasco and in place of the bacon, I substituted a cup of fatty ham that I cut off a spiral ham before cooking (braised it like the bacon but shredded the meat and discarded the fat after the peas cooked down.) Mmm-mm! Ca c'est bon!

The Very Best Black-eyed Peas. I made half the recipe for the 2 of us and wished that I had made the whole recipe as there was no leftovers. Used frozen blackeyed peas. We always have blackeyed peas on new years day, this is now my new recipe for blakeyed peas. Thank You!

I liked this recipe very much! I used 2 cups dried black-eyed peas and simmered them in 4 cups water for 1 hour. Then I drained them and followed the recipe as directed.

I liked these...but DH loved these! I was out of chicken broth so I used vegetable broth. I think it would have been better with the chicken broth as listed, but it was good anyway and like I said DH ate it all! No leftovers.

I reaaly love this recipe! It is so simply to make and goes great with corn bread for dipping! I have made this recipe 3x now and didnt change a thing. Thanks for sharing!

Love the chicken broth! I've always used water like my mom did, but never again. Skipped the celery because I didn't have any, used spiral sliced ham instead of bacon, and a one pound bag of dried peas not pre-soaked. Cooked covered for 4 hours - perfect!

My mother every year made black eyed peas and my sister and I couldn't stand them (we'd take only one bite!) After finding this recipe, I gave it to my mom to make this year and we were begging for more. Thank you for posting this recipe! We went out yesterday and bought more black eyed peas! I have become obsessed with these! I had never had black-eyed peas when I decided to make this. I used 3 cans of peas and doubled the bacon. I left out the celery,though, cause I don't like it. Since the canned peas are already cooked, I only needed to simmer it for about 20 minutes! Soooooooooooo GOOD! Oh, man, reviewing this is making me want to go fix a big batch! Thanks for the awesome keeper!
