If the spinach mixture gets dry while it is heating, add more olive oil.

I wanted to make this a little more like a baked casserole - so I added some cream to the cooked pasta (and salt). I upped the amount of olive oil, sauteed the onions & garlic, then added a 12 oz. bag of fresh baby spinach to the skillet to cook briefly. Stirred in the bacon, pasta and about 1/2 c. Parmesan cheese. Placed in covered dish and heated in the oven at 350 for about half an hour. Delicious!!!

Excellent side dish for sausage. The bacon added just the right touch.

This didn't really work as I expected. I really thought the pasta tasted too plain in the end, although the mixture of the rest of the ingredients was yummy. I would either half the pasta and not the other stuff, add more olive oil, add the bacon grease, or some combination of those. V R's technique has potential as well (even if it is quite different from the original recipe).
