This was my first chicken pot pie and it was wonderful!! I added some sliced mushrooms to the butter/onion/flour mixture and cooked until soft (not enough liquid for smooth and bubbily). I used leftover white and dark meat roast chicken and 1/4 cup each frozen peas, crinkle cut carrots, and green beans. I used refrigerated pie crusts. My husband had seconds and asked for leftovers for lunch today!! Thanks Charmie!!

This is the exact recipe I use too! It is from my Betty Crocker Best Loved Recipes cookbook. I add a pinch of thyme and celery flakes for extra flavor. I also make mini pies in tart pans they are so good, you get extra crust that way and we love the crust! Thanks for posting.

This is delicious - an excellent way to use up leftover fowl! I had enough turkey to make half the recipe in 3 individual baking dishes. I sauteed the onions in the butter a few minutes & used the leftover broth that I made from the turkey giblets. Since I buy 1% milk, I substituted with half & half to make the mixture a little more decadent. The only vegeatbles in my freezer were peas & corn ....... so I use 1/4 cup of each. I topped each baking dish with puff pastry. Thanx for a repeater Charmie!

This pie was so fantastic - I made 2 - i did tweek it a bit by adding diced potatoes, few more vegies and a little more chicken in order to get 2 pies - NO one was dissappointed at dinner time.

I loved this recipe. I made my own pie crusts and added potatoes (cooked slightly first) and frozen corn, peas and carrots. The cream sauce was slightly thick, so I made a chicken gravy to go over the top. It also freezes well. Thank you!

We had this for dinner last night and it was great! I loved that it didn't have any cream of soups in it. I used some leftover chicken that I had and leftover mixed veggies. It was very easy to make and very filling. Thanks so much for a keeper!

I made this in a small deep casserole dish as my pie plate was in use. The guts of my pie were leftover lemon garlic chicken, fresh broccoli, mushrooms, shallots and baby carrots. I cut back on the chicken broth a bit because I was worried that it wouldn't all fit in my dish, so it might have been thicker than usual, but it was fantastic. I love that it has a bottom crust too, just the way chicken pot pie should be! This is definitely in my permanent rotation now.

Ok-I am a believer!!! This is the first pot pie recipe I have prepared that does not have "Cream of XXXX Soup" as an ingredient. This recipe was WONDERFUL!! My DD says I must make it again and soon! I used my leftover Christmas turkey white meat and followed the recipe exactly, using a corn, carrot, green bean vegie mix. It was quick and easy and I am now confident that I can make a "white" sauce. Thanks for this "beginner" pot pie.
