9 Reviews of Ham and Cheese Breakfast Puffs

I am in the process of putting together a cookbook for 1 or 2 and these will go in it. I used egg substitute instead of the eggs. The yogurt allows the eggs to be light and fluffy. Instead of the cheddar cheese, I used mozzarella along with some fresh snipped chives. I used deli sliced ham and found that by cutting the slice in half and then 2 slits at a diagonal, I was able to line the cups nicely. Thanks for posting.

Very good baked egg dish, but for our taste it needed some heat so I added in 1/8 teaspoon cayenne pepper, I also added in pinch of baking powder for fluffier texture, I see no reason why this could not be baked all in one dish so that is what I did and it worked out well, thanks Pets!

I diced some leftover ham and placed some hash browns on top of the egg mixture. My family loved it---served with asparagus and drizzled the whole thing with a little hollandaise.

Lovely Brunch. These are amazing they really puff up. Time is right on-25 minutes I used very thin slices of ham - make sure the ham is not sticking up above the egg mixture or the edges will burn. I added 1/4 tsp splenda to take away any sharpness of the yogurt. Fat free yofurt works! This is a do agaon recipe
