My step kids, who are mostly vegetarian loved these (even though I assembled it more in a lasagna style dish). I was very pleased with the bean filling. Made for ZWT3...a Toast to the Captains!

    I make bean burritos a lot, but never with baked beans. I used some leftover homemade beans with barbecue sauce and they really added some nice flavors and slightly different texture with the chunks of beans. I also put some fresh spinach in and was surprised how well it went with the beans. Another great way with a burrito that is super fast. Roxygirl in Colo.

    Such a quick and easy meal that tastes great! I did brown the tortillas in a dry skillet, filled them and placed them in a baking dish. Sprinkled extra shredded cheese over the burritos and put them in the oven to warm thru and melt cheese. Yum!

    I made these for the OAMC "Freezer Tag." I followed the recipe exactly except used less chili powder, and left out the optional pepper and sour cream. I cooked them on a non-stick griddle, flipping often, till browned nicely, ate one fresh off the griddle (YUMMY!) then froze the rest. A week later I took out one of the frozen burritos and heated it in the microwave for two minutes on half power. It came out hot, still a little crispy, and delicious! Freezing directions: Cook burritos according to recipe. Let cool. Place single burritos (or family size portions if for a family meal) into plastic storage bags (I used sandwich bags for individual burritos for quick lunches or snacks), then place individual bags into large freezer bag. When ready for a burritos, simply pop it out of the bag and heat in the microwave for 1-2 minutes on medium power. Let cool for one minute and enjoy!

    This is how I make bean burritoes, but I buy canned refried beans that are already seasoned. I only recently tried freezing them — they taste different, like the frozen burritoes you can buy, but without so many weird preservatives.

    These were pretty good. Good convenience food. Is nice to hmake them and then be able to freeze them for quick lunch.

    We had these for dinner but I would eat them anytime they are so good. Added more cheese and we warmed them in the oven until the cheese melted. Topped my burrito with sour cream and salsa.
