REALLY?!?!?!?!? OMGosh. I had a 2.5 lb roast on a Tuesday night that I was looking for something to do with. I must admit, I was not expecting anything fantastic, and did not want to make a trip to the grocery store, so I had some subs. I didn't have Au Jus mix, so I used an Onion Soup Powder. I didn't have a rack that fit my pan, so I set the roast onto of halved onions. (Actually, I think this made for some great broth!). I cooked mine at 325 for 1 hour and 15 minutes. I took it out when my thermometer read "Rare" and as the roast rested for 10 minutes, it seemed to continue to cook... but it came out PERFECTLY pink on the inside with an incredible taste. DH likes his meat "DONE" while I like mine "RARE"... and this was a PERFECT blend for both of us. This is one of my new Top 10. Thank you so much... this will be served the next time we have guests. What an unexpected treat!!!!!!

Wow. This is a winner! I didn't have any au jus mix, so I used some mushroom gravy mix. I also added more win than was called for. Easy and delish!

Excellent! I used a bottom round roast and cooked it until the thermometer read 130 degrees...moist and flavorful!...My husband said it was as good as his mom's cooking! I will definitely make again!

WOW! I made this for a dinner party of 10 and I got raves all night. I used Sauerbraten mix (had no Au Jus) but it worked. Thanks for a new favorite!

This was so good. I combined the minced garlic and dijon mustard, coated the beef roast. Then I combined all of the dry ingredients (I used onion soup mix instead of the au jus mix since I didn't have any) and rolled the roast in that. Then, I seared it in a skillet with a little bit of olive oil before putting it in the roasting pan with the water and wine. Was very juicy and tasty!

This is now my favorite roast recipe. Digging through my freezer the other day, I found a 5 lb eye round roast. I got on recipezaar, and entered the key words. This recipe was awesome. The flavor and texture was one mouthwatering combination. This one's a keeper!

This roast was divine! Eye of round can tend to be dry but this was so moist and flavorful. The sauce turned out fantastic as well. I used a smaller roast, just under two lbs., and there is plenty left over for the two of us. Will make great aujus sandwiches. I will use this one each time I am lucky enough to find this cut of meat over here. Thanks Again!

Tasty and moist! DW and DD loved it. Only thing I did different then your recipe was I rolled my roast in the herbs instead of sprinkling over it. We will make this again.

This is wonderful; so moist and flavorful! For the first time in my life (sadly to say, I am middle-aged), this is the ONLY decent beef roast I have ever cooked and my family loved it. The only thing I would change is the amount of salt used; I will cut it in half next time (personal preference really; most will love this roast as-is). Also, I did not have minced garlic in a jar, so I re-hydrated some dried, minced garlic and it worked just fine. This is a keeper!

I brined the beef before cooking and omitted the au jus mix but otherwise followed the recipe exactly. Made excellent roast beef sandwiches! Definitely making this again! Thanks!
