Great! This was just what I was looking for. I might add to the instructions to fill cups 2/3 full, as I filled mine completely, and some ran over. Great tasting!

Dieting or not, this is a really good and handy recipe to have. These are also tasty cold next day and travel well, meaning they don“t fall apart. I would only add 1/3 tsp salt and some red pepper flakes.

I give this 5 stars because it's so easy to make, also a great make ahead on-the-go low carb breakfast and tastes good too....like a western style omelet in muffin form. I used lean hot turkey sausage as my meat, as well as EggBeaters. I did bake them for 30 minutes and they were perfect. Thanks for posting!

I love making this on Sunday and then eating them for breakfast during the week. I omitted the peppers (don't like bell peppers) and I used 1/3 cup of fresh, chopped mushrooms and I also used some fresh, chopped spinach that I cooked in the microwave for 90 seconds before adding to the mixture. Chicken apple sausage worked great as the meat. I also added a few dashes of Tapatio hot sauce. YUMMY!!

Yummy! I didn't add mushrooms since my hubby doesn't like them and I mixed the cheese into the mixture instead of just on top. I also used a spicy turkey sausage so they had more flavor and a bit of a kick. Turned out wonderfully!

Just realized I had not rated these. This is what I made when my DH and I started the SBD on Feb 1st. We thought if this is what the food on this diet is going to taste like, we should have started years ago! These are very filling and were very easy for my DH to take to work and heat up, as well as being easy to make. I doubled the recipe and made this again when we finished the first batch(which didn't take long!). Thanks for posting.
