I have had the pleasure of having both White Castle and Krystal burgers. Since neither is available in my area, when I saw these, I knew I had to make them. For the onion soup mix, I used my Onion Seasoning Mix recipe 89857. I mixed the hamburger mixture and patted the meat out somewhat and then used a glass to roll it out to fit the pan. I was pleasantly surprised when the meat was done in the 10 minutes specified. In order to cut these into those square burgers, I used my pizza cutter. Worked like a charm. These are as close to Krystal's as I am going to get for awhile and they definitely satisfy my craving. For the buns I used Hawaiian King dinner rolls which were perfect. Thanks for a wonderful recipe.

    Here is an easy way to prep the mini burgers. Line a jellyroll or sheet pan with parchment paper, and place the ground chuck in the middle of the pan. Cover the meat with a large sheet of plastic wrap. Roll meat with a rolling pin until it covers the surface of the pan; it should be very thin. Remove the plastic wrap, and sprinkle the meat with the seasoning mixture. Fold the meat in half, from side to side, using the parchment paper. Use a pizza wheel to cut the meat into even squares. I also thought sprinkling minced, dried onion flakes on top might be a good way to absorb the juices and use on top of the burgers for those who would not mind the "excess drainage".

    What a great recipe! I have made these twice already and I think it is fast becoming one of our favourite recipes. These work perfectly for Once a Month cooking because these freeze great and can be reheated in the microwave. These will work out very well if we start craving burgers during the cold weather we can make these instead of grilling!

    SO good!! I made these for Freeze It Tag, so ate some immediately and froze the rest. Reheated wrapped in a paper towel for 45-60 seconds. Really excellent both ways. These are wonderful for kids, either as an after school snack or meal. Young kids would especially like the small size. The adults loved them, too. Would be perfect for football or other parties. I used a 24 count package of Mrs. Baird's oven rolls with great results. Thanks, Chef Doozer, for a super recipe!!

    Having been raised on White Castles back in Detroit, I was skeptical this recipe would cut it because even the name brand frozen ones at the stores don't taste the same. These are PERFECT! The next time I'll use a larger pan (I only had 8x11 available) and press them even thinner like the real thing. For now I'm just slicing them in half for two thin patties. Perfect combo of ketchup and mustard. I will be a hero at our next family gathering here in Kalamazoo... where there are no White Castles for at least an hour in any direction. **Edited to add, I froze some to see how they'd hold up. Glad I did. I would freeze the patty alone and put it on the bun after reheating it. The bun got too chewy to classify as a White Castle burger. Still worth 5 stars in taste.

    These were AMAZING! My daughter actually ate the meat patty before the roll, which NEVER happens! Thank you for sharing this recipe! I will be making these for a potluck tomorrow they were so easy! **update** made triple the batch for a family potluck and they were GONE in seconds! Everyone asked who made them. Also, I used a lipton onion soup mix and put it through the food processor when I made my breadcrumbs; it seemed to distribute the flavors a bit better. thanks again for sharing!**

    I would have my DS's to be excited, but gotta wonder about my DH chuckling over these! Bad time of year-or at least week, could not find any dinner rolls, used hot dog rolls instead, cut in half, not horribly attractive making these this way-but hey tasted fine! I placed these in a bowl and had my guys just 'dive' for them. Thank You Chef Doozer!

    We loved these! I used a 8x8 pan for thicker burgers and used regular hamburger buns. This is the closest to White Castle that I have ever tried. I served them with just Mayo and dill pickle slices. So, so good. Can't wait to make it again.

    These are SO GOOD! I was tickled to find this recipe, because my daughter just came back from visiting relatives back east and had her first White Castles. My family absolutely INHALED these. I added extra meat (upping the protein) and froze them into packages of two for lunches and snacks. I already need to make more! HUGE HIT!
