Mayo in general creeps me out but on the outside of a grilled cheese? EEK. I thought poor Dawn had to be mistaken. LOL But I was intrigued and had to try it. The mayo (I used Best Foods brand) works PERFECTLY for a grilled cheese — it turns a gorgeous brown and it doesn't leave behind a mayo flavor. The added benefit is the easy spreadability of mayo as butter is often too hard and will tear your poor little pieces of bread. With this recipe you don't have to wait for butter to soften — you can have a grilled cheese right freaking NOW. This is how I will make a grilled cheese from now on. Thanks Dawn!

Well it's just grilled cheese, but the mayo instead of butter is worth 10 stars. It is sooo much easier and grills the sanwiches to perfection. We made these in a fit of hunger late last night. Shelly made a plain version and I made a couple with cooked bacon and chopped green olives. They were yummy. Don't know why I never knew about the mayo trick before - it's a winner.

I have been making grilled cheese sandwiches this way for years. My "big kids" still request these all the time! I have made them for other kids that were visting my kids and, since I shooed everyone out of the kitchen before I did it, nobody knew! I'd get comments like "That was the best grilled cheese sandwich I ever had!"...But I didn't let them in on my secret! Mayonnaise makes the bread more "crispy" than butter or margarine. I also use cheddar, MJ or Provelone cheese rather than American slices, which, to me, are alot more disgusting than mayo! The secret is to spread the mayo thinly all the way to the edges of the bread. It makes the crust taste almost like pie crust. I believe mayo cooks faster than butter/marg so I turn the stove down a little bit (just under medium) and watch carefully so that the bread doesn't burn. Also, before I put any mayo on the bread, I usually pop the assembled sandwich in the microwave for 20-30 seconds (depending on how thick the cheese is) to start the cheese melting before I put it into the frying pan. This guarantees a nice melty grilled cheese sandwich. After the cheese is warm I put mayo on the first side of the sandwich and don't spread it on the second side until the sandwich is in the pan. If I'm making it just for myself, I sprinkle a tiny bit of salt, pepper and maybe garlic powder on each side before spreading the mayo. The mayo trick works well on Quesadillas, too (using flour tortillas), but go easy on the mayo!

This was a great sandwich. I enjoyed the new taste of the mayo. The sandwich was lovely brown. Definately a keeper! Thanks for sharing.

Great simple grilled cheese. I didn't taste a noticeable difference in using mayo instead of butter. I came away with crispy, toasted bread and gooey melted cheese. It is the perfect sandwich for tomato soup.

"Mayo on grilled cheese?" "Never!", I said. I had never heard of this technique before until now. When I saw your recipe, like others, I had to try it right away. Crispy brown and beautiful! This makes a lovely sandwich : ). I used a mild cheddar and just a touch of sugar on the inside, like I always make my grilled cheese sandwiches. Thanks for sharing this, Dawn!

Who would think something so simple would taste so good. I love grilled cheese but hate soggy ones, I was not convince mayo would be a good idea I hate mayo and was afraid you would be able to taste it. This makes a wonderful crisp sandwich but you do not taste the mayo. This will be the only way I make grilled cheese. Thanks for sharing this recipe.
