Thanks Mercy for the recipe. All I had was 2 cups of hominy, so used that along with ground beef since the recipe stated any meet could be used and it was great. The soup is actually very similar to a mexican soup I've been looking for, for a long time now. The hominy replaced the corn tortillas which we usually eat with this type of soup. I did use about 1/2 cup of cilantro for a stronger taste. Thanks again

Posted this morning cooked at noon! This is a hearty, robust soup bursting with flavor - perfect for our snowy, snowy day. I didn't have Hominy corn so I substituted Chick Peas (Garbanzo). We can now buy fresh frozen finely chopped Cilantro in cubes = 1 tsp. I put in 5 and it was just right. This sounds like less than called for in the recipe but it is so finely chopped that it gives out a lot of flavor Thanks for a very tasty comfort soup mercy
