This is a delicious chicken recipe, We are watching our Carbs, This really fit the bill. Very easy to make,I cut the recipe down for 2 people. I pounded the chicken breast as they were fairly thick, other than that I made it as the reciped stated, But, using more than 1 tablespoon crushed tomatoes as 1/2 cup is more than 1 tablespoon for 2 chicken breast, the orgional recipe says 1 cup for 4 breast, that is more than 1 tablespoon for each breast. The Ricotta cheese mixture is great. I will definetly be making this again. Will make a great dinner for guest. Thank you Carrie for posting the recipe.

    Loved it!! Substituted cottage cheese for ricotta (don't care for it) and it turned out wonderful.

    Very, good, quick & easy to prepare! I substituted Trader Joe's Tomato Basil Maranara sauce instead of the plain tomatoes AND my new favorite, Foster Farm's thin sliced chicken breast fillets.

    Another 5 stars! I didn't have fresh parsley, so I used dried flakes and I already had a jar of low sugar pizza sauce opened so I used that instead of tomatoes. Very easy to prepare and it was done in 30 minutes. I ate this for dinner last night with a side of brussel sprouts and looked forward to my lunch today and served it with a small tossed salad. Great recipe, I will make this often!

    Loved this recipe. My DH said it was like eating lasagna and chicken at the same time. I ended up using crushed tomatoes that had mushrooms and green peppers already in it but I did throw in a little bit of basil. I also used fresh garlic for the chicken instead of garlic powder. Wonderful recipe, easy preperation...Thanks!

    Fabulous!!!! We aren't on the South Beach Diet or anything , but came across the recipe and it just sounded good!! I'm SO glad I decided to make it!! Made exactly as the recipe stated ... We all 3 enjoyed it SO much!! Easy to prepare , not too time consuming and what a fantastic taste!!! This one definitely stays in my "make often" file!!! Thanks so much for posting it!
