Move over V-8....this is the way to drink your vegetables! LHM, This recipe is divine. No wonder your husband thinks it's cheddar cheese soup. The color: The orange puree from the carrots makes it look cheesey..even before the cheese was added. ( Roo... Trying to type, clean out the soup bowl and lick the spoon all at the same time). The texture: Smooth and creamy. One would think this soup would have more of a dairy base rather than veggies. The flavor: Rich and mild at the same time. I wondered at first about the garlic...love garlic but with cauliflower? Trusted the recipe (& you) and added it. I would never guess the main ingredient in this soup is cauliflower. The only change I made was to add some nicely aged shredded Romano with the cheddar. This soup is a keeper. Tomorrow I'll try this soup in a breadbowl for lunch...=) Thanks for posting.

    Wow! This is unbelieveably wonderful! I fixed it exactly according to directions, using a sharp cheddar. I blended it only to small chunks, not to a smooth puree. Even using 1% milk, it tasted very rich. Next time I will double the recipe so I can have some leftovers to freeze for lunch portions.

    One of my favorite soups so far. Thank you so much for posting! I added a bit of sour cream and shredded bacon ontop for a treat. I did'nt have potatoes, so I added more cauliflower and it was great. *Update 2/13: I made this again and used sweet potatoes and FF milk to make it WW friendly and it worked wonderfully!

    WOW!!!!! I think I have a new favorite soup. I am typing as I eat since I could not wait to review it. I followed the directions exactly. I used chicken broth and doubled the recipe. I did not double the cheese, dill, or mustard though. I used sharp cheddar and it was strong enough and dill and dry mustard are not my favorite seasonings and I did not want them to be too strong. The kids are begging to take this to school tomorrow in a thermos. Yippee!! I am getting cauliflower, carrots, and potatoes into my kids. I did puree most of it in my blender but left a few chunks of potato and carrot. It would probably be really good with some provolone or pepperjack or something like that on top too.

    Really, truly enjoyed this soup. Now I'm not a "creamed" soup lover, usually because of calories and fat content. I will say that I did three things different, 1. used 1% lactose free milk. 2.added about six drops of hot sauce. 3. used Mrs.Dash sesasoning instead of salt. I doubled the recipe without any problem. Used my blender. Also heated the milk by itself and then stirred in the cheese until combined...then into the soup. This was such an easy recipe to follow. Will be around my home for a long, long time!

    This was a very good soup for a cold day. I added a little more cheese and some real bacon & I put Croutons on as topper when served. Loved it!

    This was easy to make and tastes great. I added some cayenne pepper and left the cheese out, to save a few calories. Yummy!

    Wow was this good and easy to make even in the midst of chasing a toddler and holding a 5 month old. I don't know if I waited too long though cause my cheese didn't melt all the way. But it was still good, I left it a little chunky and the carrots didn't puree so well for me, but it was still great. My picky two year old ate a bowl and a half which is great for her.
