I prepared and reviewed this recipe for a little recipe exchange in the threads, and OMG is it ever GOOD!!!!! I would highly recommend this simple, healthy, and tasty meal. I will definetly make this many times over. Maybe with a little pork tenderloin? MMMMM! I used my homemade Italian stewed tomatoes, and will not add the Italian seasoning to the meat next time, (it's in the sauce) adding mushrooms would be good to..mmm..I'll get back to ya!

Very tasty!! DH's birthday today and he really loved this chicken parmesan, it does taste just as good as the heavy caloried version. I used skim milk mozzarela. My sauce was quite heavy with garlic so left out the garlic salt. Excellant low carb recipe, thanks for sharing!! — Nov 1, 2005, 1 member found this helpful Made this for dinner tonight and it was just as delicious as the first time, real yummy dinner, thanks again for posting.

For a low carb breading in this recipe try using crushed up pork skins either spicy or unseasoned. The pork skins are protein once cooked hardly any sugar in the unseasoned ones and do they pack a crunch!

I baked it with spaghetti squash and lots of mozzarella cheese - we thought we had a pasta casserole. Thanks!

Absolutely delicious and so easy to prepare. I couldn't find the sauces recommended in the recipe so I used Emeril's Kicked Up Tomato Sauce which has only 4g of sugar per serving. I'll be making this again and again. Thanks for sharing Tara.

This was really good, I toasted up a piece of Net 4 low carb bread and then processed it into bread crumbs and mixed it with the seasonings before adding the chicken. My husband loved it and he never knew it was low carb.

This was so so so very divine... better than "real" chicken parmesan - no breading to get soggy
