I had been craving for mexican for a week and thought this might curb the cravings! Boy did it! I used mild salsa, I flattened the chicken breasts sprinkled with taco seasoning and left in the fridge for an hour, I pan fried them until nearly cooked then popped the salsa and cheese on top and only did them for 7 minutes in the oven. I served it with sour cream on the side, steamed veggies and oven baked chips. Thsi will be a regular in our house.

We just started the SBD and both me and my boyfriend loved this one! I served it with a salad and Mexican Jumping Beans (Mexican Jumping Beans (south Beach Diet-phase 1 Friendly)). We will be having this again and again!

We really enjoyed this low-carb dish! I used Penzey's taco seasoning and a store bought "hot" salsa and boy did it have a kick! I think the kick was from the salsa, but we really liked it! I served this with beans and a salad. I will make this again. Thanks for posting!

How can this be considered dieting when you eat this good??!! I used my own taco seasoning Bulk Taco Seasoning Mix and served this with your mexican jumping beans. It was a great dinner, thanks for sharing

Great recipe, especially for our two-diet home! DH is doing Weight Watchers, and I am South Beaching. This recipe works great for both! I did use a lot more salsa than called for, and added more cheese to mine. I used light pepper-jack for my piece. YUM! Thanks!

I was reluctant to try this because it seemed way too simple. I didn't think that it would taste all that good. I used fresh salsa, ( from the refrigerated section of the grocery store.)and Fat-free cheddar cheese. It was wonderful! I think that getting a good salsa will make a big difference in this recipe.

Made this for dinner after searching for a healthy chicken recipe that I had never tried before & both my husband & I loved it! I also made a zaar recipe for taco seasoning, and then used fresh salsa from our local deli that I also added several drops of hot sauce to....that is only because my husband likes REALLY hot things. After tasting the recipe I would have been fine w/o the hot sauce, but my husband thought it was perfect! Even with the extra heat, I really, really liked this tasty dish!
