I made this once before, and I thought it was VERY bland. It's a good mix of veggies, but I felt it needed a lot more flavor. I tried it again making some changes, and it tastes much better. My changes: I sauteed a few cloves of garlic--minced-- and chopped shallots in olive oil, then added some dry white wine. I used Wolfgang Puck's veggie stock and no water. I also added fresh parsley, rosemary, basil, and 2 bay leaves. Also added chopped celery and shallots to the soup. NOW we're talking good soup!

Weather has been so cold lately that I wanted to make a huge pan pot of soup and tried this one. Glad I did, what a wonderful soup and the potatoes thicken the broth. I added a few shallots and chives. Yummy indeed!!!!! I'm a vegan so this is a great new addition to my little cookbook of favorites.

This soup is a must try. I had leftovers so I froze in freezer baggies and took for lunch a few times also. Hard to get kids to eat their veggies and all 3 loved it. One sprinkled a little parmesan on top of the hot bowl of soup. I didn't vhange a thing in this recipe and will make this often.

The best vegan recipe yet! I did break a paring knife so dig out the sharp knife that's sturdy for the rutabagas. I made no changes to the recipe! Thanks

Hearty is right. This is a good winter soup. I added a little extra barley since I love barley and never have recipes to use it in.

My family and I loved this soup. Nothing left when we were done. Be careful with the rutabagas, they are hard to cut. Got a saw....Just kidding!

I printed and saved this recipe a few months ago to try later. I'm so glad I decided to give it a try. Was the best veggie soup I've ever tasted. Took some to work and my coworkers enjoyed it also. I added 1/2 of a black radish chopped since I like the spicy taste of them. I joined this site so I could send in a rating here.

What I really enjoy abou this recipe is the flexiblity. I did not have all the "roots" available to me when I prepared this recipe at a client's home the other nite. I used potatoes, carrots, onion, celery, and green bell pepper for the vegies. I added 3 cloves of fresh garlic and about 2 teaspoons of chicken boullion. I sauted the onion, celery, pepper and garlic before adding it to the potatoes and carrots. The client absolutely raved about it and she's EXTREMELY picky! Thank you for the recipe to spark a spin off for a delish dish.

Jam packed with nutrients and hardly any calories. I loved this soup. I put lots of garlic in mine. Thumbs up and 5 stars too!
