Just got back from the supermarket and had to fix myself a quick dinner. So i decided on trying this salad after taking a peek at pamelas colouurful photo.)).. I cant begin to tell you how wonderful this tasted......and my hubby was surprised as this was not a cold one ,the only he is used to eating......I must add that i made a few changes to suit our palette.. I added a clove of garlic and instead of green chillies which i did nothave on hand, added red chillie flakes, red chilli powder and pepper powder...it was steamy and very yummyyyyyy.Thnx again for a lovely recipe...

Beautiful colors and real easy to make but needed a little something to give it some umph. I seasoned with salt and pepper and then the red pepper flakes which fixed it right up. Thanks Pam.

This recipe kicks corn up a notch. I used a can of corn niblets, prepared all the ingredients, mixed them together, put them in a casserole dish baked covered for 25 minutes. Perfect. Thanks Pam for an easy , attractive tasty corn recipe

This was a perfect addition to my mexican themed dinner party for 12. I served this with chicken enchiladas (Chicken Enchiladas), Rice (Simple Tex-Mex Rice), and salad (Mexican Salad). This dish is so colourful and tastes great. Thanks for posting!

I made this for part of our Christmas dinner, looks very pretty when put together and we liked the 'bite' of the added chilies. Thanks for sharing.

Very colorful and would be perfect for a potluck or buffet. I do think it needs a bit of salt & pepper. I did appreciate that the dish wasn't swimming in butter or water. Draining it all made a huge difference. Thank you for sharing your recipe!

Wonderful side dish to add color to a bland looking main dish meal. I had to improvise and use a high quality canned corn but the results were beautiful! Thanks!

This was great stuff ! I had originally planned it as part of a Veggie Variety Plate but ended up too pressed for time so I made only this and served it over rice with Margaritas. I thought the green chilies kicked it up just enough. DH added a touch of hot sauce. The only changes I made were to double it and leave out the extra margarine. I just gave my pan a good coating of Olive Oil cooking spray. It is going in our Faves book. Thanks for sharing !

Very tasty. Used butter for the margarine. I also added abit of chopped jalapeno with the green/red peppers. Enjoyed the recipe, thanks for sharing.
