I read this recipe while scrolling through the "recipes of the day" section and immediately went to the kitchen to try it! I had a 1/2 of a cauliflower head leftover from a previous meal & threw the ingredients together & had it in the oven within minutes. I went light on the chili powder as I was uncertain, but would go full throttle next time. A really delicious way to cook cauliflower. I grew up eating it boiled only (boring)! What a treat! I have friends & family on Atkins and have e-mailed this recipe to them as well. Thanks for sharing - LOVE TO ROAST MY VEGGIES!

Wow..this is just wonderful..I have never thought of roasting cauliflower before..and as its one of my favourite vegetables I was looking forward to try something new. The flavourings were a perfect mix and we uhhh scoffed the lot between the two of us! Thanks for sharing.

My kitchen smelled great while this was cooking. Next time I will leave my flowerets larger, since they do shrink upon roasting. I used white balsamic vinegar, which has a more delicate sweetness than the regular and didn't discolor the cauliflower. Served with "Jack in the Box Tacos." Roxygirl

Great recipe. I used real garlic and red pepper flakes because I didn'thave the chille powder. I thought I'd share a helpful hint someone taught me. I put the olive oil, garlic and red pepper flakes in a big ziplock back and shake to mix all of the ingredients. it's very easy and easy to clean up. Thanx for sharing the recipe!!!!

Yes! Never thought I'd say a cauliflower dish was incredible but....this really was fantastically incredible. I made 2 slight changes by adding some broccoli florets and about 12 whole cloves of garlic. Roasted it all as directed. Then, I took out the garlic, mashed it with a fork and then whisked in a bit more than 1 tbls of balsamic. I tossed the veggies in the garlic/balsamic mash and served. Outstanding! We will make this again and again, thank you.

I love this cauliflower. I cut the recipe down quite a bit (to try it), but now I'm wishing I'd made more!!! I added the seasonings to the olive oil, put the cauliflower in a plastic container, then pured the olive oil and seasonings in, put the top on, and shook it up. It seemed to coat the pieces well. I forgot to turn them during cooking, but they were still excellent. I can't wait to make this again!!

I had a head of cauliflower and no idea what to do with it. I absolutely loved this recipe. I'm not a fan of balsamic vinegar, I think it overpowers all the other flavors in dishes. But in this it really added to all the other flavors, kind of bringing them together. I ate most of it for dinner, and the rest for breakfast the next morning.

I forgot to add the balsamic at the end but it was tasty anyway. I was a little surprised that it was so tender--- almost too tender? I expected it to have more "bite"... I will try again, definitely.

This is one of those recipes that makes you wish there were more than 5 stars! I cannot describe how good this cauliflower was! It was incredible and got a thumbs up from my whole family, including my picky veggie-hating kids. Thanks for a great recipe.

Mmmm This was delicious! I actually sprinkled a bit of ground cumin on it and forget the balsamic vinegar at the end but it tasted amazing anyway. Thanks so much for posting!
