I agree with Melou on the temp, it should be 350 F not 325 F. I also agree with the other chef that used the butter flavored shortening. It makes it flavorful and moist
I've made this recipe three times now so it's the one I go to now

I think the temperature is off by 25 degrees. It probably should be 350 not 325. I ruined 4 loafs before trying the higher temp and that time it worked great. I did check the temp on my oven with an oven thermometer before submitting this (it's brand new anyway, better not be off) so I wouldn't find out I was an idiot.

This is absolutely the BEST banana bread I have ever eaten! I've been looking for a good banana bread recipe for a while. Tried lots and this one is the best! I've made it several times since I discovered this recipe.

Very moist and flavorful bread. I used butter for the shortening and 4 very, very ripe bananas. I made it as written except I added a tbsp of fresh orange zest and that worked well with the banana taste. Great recipe Tom!

This is just wonderful banana bread. Very moist and a nice banana flavor. I made a triple batch and had no problem cooking it at 325 - they rose beautifully and are a nice golden color. Like another reviewer, I did cut back the sugar to 3/4 cup and it's still plenty sweet. Even cutting back to 1/2 cup sugar with very ripe bananas would be fine, I'm sure. Thanks for an awesome recipe that we will be enjoying many more times.
