Yum what a great quick snack and so many possibilities on variations of the stuffing. The hot sauce and cream cheese work really well together with the pickle. I didn't have a dill corer but a hobby store sold me a few short lengths of aluminium rod for a few dollars that worked really well and gave me a few different sizes because the local pickles seem to vary a lot in size.

Great recipe. My daughter loves these as a snack. I decided to just cut the pickle in half and then hollowed it out. Dried it with a paper towel and filled with the cream cheese mixture. Tastes great using cream cheese with onion and chive already mixed in too. Thanks for the great recipe.

Hi Uncle Bill, your recipe piqued my interest. Add a large jar of dill pickles *where they came from? Who knows--mindless purchase* Anywhooo, made your stuffed pickles AND *hope you don't mind* added 1 Tbsp. garlic and a dash of Tabasco. Verry good. Thanks for posting; will make again!Caroline

Uncle Bill, these were really delightful. I made them following your recipe, which was wonderful. I also made them using chopped Black Forest Ham and cream cheese with a touch of Tabasco. I used the refrigerated Claussen pickles because they were larger, and I could use the apple corer. We gave these 2 thumbs up. I'm ready to try new ingredients to stuff them with. Thanks for sharing this simple, but tasty recipe.

Well Uncle Bill these were the biggest hit of the New Years Eve gathering. I didn't change a thing and I just doubled it but truth be known i should have tripled it, these were goobbled up so quickly, even the kids at the party kept circling the table like little vultures. Thank you so much, 2 thumbs up, its a keeper.

These are spectacular, I did add some finely chopped pastrami and took them to a party. Man were they a hit!

Great recipe!! A little difficult to core without the proper tools, but the flavor was excellent. Without the pickle, this makes a great spread for crackers (tried it and loved it!!). I thought I might try topping a cracker with a thick slice of pickle and piped cream cheese mixture on top of that....less hassle with the same flavor result. Thanks a bunch!!!

I have made thse twice now. One time exactly as directed and one time using Brie and Red Onion....both are winners and have been raved over by everyone who tasted them. This recipe is great as written, but also can be adapted to anyone's tastes!!!! Another winner Uncle Bill!!!

Yummy! My husband made me a corer out of two different sized pipes, my apple corer was way to big. I used Klaussen pickles. I drained the pickles by putting paper towel in the bottom of a glass and stood the pickles up. I used dried chives in place of the onions. Filling was a little tricky, I used my fun gun. Ended up taking the tip off and then filling. I am going to use a ziplock with the corner cut off next time. Next time I am filling with a mixture of equal parts of cream cheese and canned ham, and a few green onions mixed up in the food processor.
