I highly reccomend this corn muffin recipe, as 1 of the best tasting corn muffins ever! I will add a bit more sugar, as we like ours sweeter. Muffins are not crumbly & stay together well. Thanks for posting!

These are wonderful, definitely not your usual grainy corn muffin. It's my most frequent last minute dinner bread, even easier when I have the dry ingedients premixed so they go together in a flash. I usually use low-fat sour cream. The batter is very thick and you may want to double the recipe as it only makes 8 muffins. My whole family loves them with honey and butter. These are, without a doubt, the best corn muffins I have ever had. Even DH, who normally won't eat them, had two. I was surprised at how moist they were. These are the only corn muffins I will make from now on. Thanks so much for posting such a great recipe.

These were SO good! I used my leftover fat free sour cream and subbed yogurt for the rest, but they were so moist and i really couldnt believe they were fat free, I kept wishing i made more. I'm going to surprise my parents with these when I get home for spring break!

These were very good. I was looking for a recipe for corn muffins that didn't need butter, because the only kind of butter I had was that in a tub. This worked great! I increased the amount of sugar to 4T and used low fat sour cream, but otherwise followed the recipe. They were especially yummy with a bit of butter and a drizzle of hunny!

I agree with Kasha these are a little different. For whatever reason, my did not have the nice rounded tops I am use to with muffins. Maybe it something I did. Didn't affect the taste though. Thanks!

These muffins are fantastic. I made them exactly as directed and I would not change a thing about them. Since it is just the 2 of us, this makes us 2 meals.

Different than other corn muffins--more like a cake. I doubled the recipe and would definitely make them again, but the other reviewers are right, they are not grainy and I kind of like that quality. Easy and fast to do.

Good but not our favorite, we felt these were a little bland and uninspired.
