Shortbread Base

  1. Preheat oven to 350°F.
  2. Cut butter into 1/2-inch pieces.
  3. In a food processor process all ingredients until mixture begins to form small lumps.
  4. Sprinkle mixture into a 13x9x2-inch baking pan ad with a metal spatula press evenly onto bottom.
  5. Bake shortbread in middle of oven until golden, about 20 minutes.
  6. While shortbread is baking, prepare topping. In a bowl whisk together eggs and granulated sugar until combined well and stir in lemon juice and flour.
  7. Pour lemon mixture over hot shortbread.
  8. Reduce oven temperature to 300°F and bake in middle of oven until set, about 30 minutes.
  9. Cool completely in pan and cut into 24 bars. These cookies keep covered and chilled for 3 days.
