Lemon Poppy Seed Quick Bread Recipe #46285

Has a fresh lemony flavor that is cheerful and light.

SERVES 8 -10

  1. Preheat oven to 350 degrees F.
  2. Grease and flour a 9x5x3-inch loaf pan.
  3. Mix together flour, pudding mix, sugar, baking powder and salt; set aside.
  4. In another bowl mix together the milk, eggs, lemon peel and butter; stir in the extracts and mix well.
  5. Fold in the poppy seeds.
  6. Pour the batter into the prepared loaf pan and bake in the preheated oven for 60-70 minutes or until a toothpick inserted in the middle of the loaf comes out clean.
  7. Allow loaf to cool in the pan on a wire rack for 10-15 minutes, then remove from pan and finish cooling on a wire rack.
