  1. In a large bowl, combine first 4 ingredients.
  2. In a small bowl, whisk together the vinegar, apple juice and honey.
  3. Add salt and pepper to taste.
  4. Pour dressing on vegetables and toss.
  5. Chill until ready to serve.
  6. Garnish with fresh parsley.
