Christmas Pudding - Diabetic Recipe #380987

I got this years ago from a friend who was a chef at a hospital. Even though it is specifically for those following a diabetic diet I have made this for family Christmas and you really can't tell the difference.

SERVES 8

  1. Chop apricots, remove stems from dried figs and chop. If raisins are large chop roughly.
  2. Mix together the carrot, figs, apricots, raisin mixture and grated orange and lemon zest.
  3. In a separate bowl beat together the sugar and butter until light and fluffy, gradually beat in the eggs; stir in all the remaining ingredients including the fruit. Cover and refrigerate overnight.
  4. Spoon into a 900g/2lb pudding basin, cover with a pleated piece of greaseproof paper and secure with string.
  5. Steam for 4 hours, ensuring that the pan does not boil dry.
  6. Serve while still hot.
