Chocolate Chip Banana Oatmeal Cookies (Vegan or Not) Recipe #380594

This recipe I adapted from a friend's Cowboy Cookie recipe. These cookies are a huge hit and are very good right out of the oven with milk or soy milk! My suggested ingredients are in parenthesis. The banana is a replacement for two eggs and the banana taste is very subtle. This recipe makes a lot of dough, so I make about six cookies at a time then place the rest of the dough in the refrigerator or you can even freeze it.

  1. Mix first five ingredients in mixer until blended.
  2. Add the remaining four ingredients. Blend well.
  3. Add oatmeal and chocolate chips last.
  4. You may decrease the oatmeal if the batter seems too dry.
  5. Bake at 375 for approximately 12 minutes or until cookie is light brown. Don't over cook!
