Vegan Candied Sweet Potatoes Recipe #380102

This is another recipe I got from the 3ABN network cooking show. They are very good but quite different from the normal "candied sweet potatoes." My family are now preferring these to the old ones with the brown sugar and marshmallows. These are more healthy too which makes a mom feel good. cooking time and prep time does not include the time to bake the potatoes.

25 min | 10 min prep

SERVES 6 -8 , 1 dish

  1. Bake potatoes in skins and let cool to handle.
  2. Slice in thick rounds (maybe 1/2 inch thick).
  3. Place in baking dish that has been sprayed with non-stick vegetable spray.
  4. Mix honey and coriander into the coconut milk until smooth and well mixed.
  5. Pour over the potatoes.
  6. Sprinkle with chopped walnuts.
  7. Bake at 425 for 15-20 minutes.
  8. They will absorb the liquid and dry a tad while they bake.
