Low-Carb Lettuce Wraps Recipe #367620

This recipe is a result of my friend's no-carb diet...& we basically just pulled out everything from the fridge that he can eat and made lettuce wraps from it. I thought they turned out surprisingly well so I wanted to share!

SERVES 2 , 8 Wraps

  1. finely chop your zucchini and water chestnuts & set aside.
  2. wash butter lettuce.
  3. combine turkey, parmesan cheese, & salsa in a bowl.
  4. once combined, brown turkey slightly.
  5. add zucchini and chestnuts, also soy sauce.
  6. {it's important to have the salsa and soy sauce in the turkey, not just for flavor but because lean turkey tends to get really dry when cooked}.
  7. once meat is cooked thoroughly and veggies are tender remove from heat and let cool just for a few minutes {the hot meat tends to really wilt the lettuce}.
  8. And -- that's it! Easy, quick, healthy & yummy! I top mine off with a little more salsa {Los Pastores is my favorite!}.
