Coconut Lime Smoothie Recipe #364167

I was just wanting to try to make something new and this is what I threw together. You can't taste the spinach AT ALL. Tastes very limey - add coconut milk if you have it to balance it out if you want. -------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------What's great about this pairing is that the ascorbic acid, the vitamin C, in the limes helps the body absorb the iron found in the spinach. Without vitamin C mixed with the spinach, the human body only takes 20% of the available iron in the spinach! Drink up!

SERVES 2

  1. Cut open the coconut.
  2. Drain the coconut water into a blender.
  3. Scoop the coconut jelly (young flesh) out of the coconut and into the blender.
  4. Add spinach leaves and the rest of the ingredients.
  5. Blend and enjoy!
