Vegetarian Pea Soup Recipe #348388

one of my favorites from barefoot contessa...had to post here so i could get nutritional information..

SERVES 10 -12

  1. saute onions and garlic with olive oil, oregano, salt and pepper. add carrots, potatoes, peas and stock. bring to boil then simmer 40 mins or until peas are soft. this soup thickens as it cools. serves 10 - 12.
