Cawl - Welsh Broth Recipe #326884

I got this recipe while I was in Cardiff, Wales. Cawl is great hot right after you make it but even better when left overnight and reheated.

1 pot

  1. Place the meat in a large saucepan and cover with water, add salt and pepper.
  2. Slowly bring to a boil and skim carefully.
  3. Add the chopped carrots, swede and whites of leeks and simmer for two hours.
  4. Add chopped potatoes and simmer for further 1/2 hour.
  5. Thicken with flour and water and add the chopped parsley and green of leeks.
  6. Simmer for further 15 minutes.
  7. Serve Hot.
