Luxury Cauliflower Cheese Recipe #324053

Definately beats boring old normal cauliflower cheese. Passed on to me by a friend, and I now never make it any other way. Can replace vegetable ingredients with anything else. My family love when I make my version known as 'Cheesy Cabbage'.

SERVES 4 -6

  1. Pre heat oven 180 degrees.
  2. Chop cauliflower and put in large pan of boiling water. Cook until tender.
  3. Heat the oil in frying pan, and add sliced pepper and leek, until softened.
  4. Stir in flour and mustard, cooking and stirrring for 2-3 minutes. Take off heat and add the milk gradually stiring until well blended.
  5. Return to heat and bring to boil, stirring until thickened.
  6. Stir in 175g/6oz the cheese and season with salt and pepper, add parsley.
  7. Put cauliflower in ovenprooff dish, spoon over cheese sauce and sprinkle rest of cheese on top.
  8. Place on oven for 20 - 30 minutes. Alternatively can place under grill for 5 minutes.
