  1. In a large bowl, mix together flour, flaxseed meal, oat bran, sugar, baking soda, baking powder, salt, and cinnamon.
  2. Stir in carrots, apples, raisins (if desired), and nuts.
  3. Combine milk, beaten eggs, and vanilla.
  4. Pour liquid ingredients into dry ingredients. Stir until moistened. Do not overmix!
  5. Fill muffin cups 3/4 full. Bake at 350 F for 15-20 minutes.
