Real Swedish Pancakes (Pannkakor) Recipe #31040

This is how we make them here in Sweden. My mother always does them this way, and in every other Swedish family I have visited. The other recipes I have seen here have little resemblance with the original.

SERVES 4

  1. Mix eggs, flour and salt.
  2. Add the milk, a little at the time, and beat to a smooth and rather thin batter.
  3. Heat the skillet, add a little butter and fry the pancakes on both sides.
  4. Roll or stack them on a serving plate.
  5. Serve hot, preferably with whipped cream and jam.
