SERVES 9 , 6 cups

  1. Preheat oven to 375.
  2. Combine butter, egg whites, and cream cheese in a large bowl and whisk until smooth.
  3. Add onion, bell pepper, corn, and creamed corn, and mix well.
  4. Add muffin mix and black pepper, and mix well.
  5. Pour into a 11X7 inch baking dish coated with cooking spray.
  6. Bake for 50 minutes or until a wooden toothpick comes out clean.
