Mom's Swiss Steak Recipe #181687

This is an old recipe from my mom. She called it stroganoff. It's a pretty healthy recipe considering it uses tomato juice and doesn't use sour cream (instead, it uses evaporated milk and lemon juice). Round steak is relatively low in fat also (compared to some cuts).

SERVES 4

  1. Cut round steak into 3 x 1 inch strips.
  2. Heat oil. Brown strips in it. Add onion, salt and pepper. (Note you can probably omit the salt if your tomato juice has salt in it.) Cook long enough to soften onion.
  3. Blend in flour, then tomato juice and mushrooms.
  4. Cover and cook over low heat one hour or until meat is tender.
  5. Mix together evaporated milk and lemon juice and then stir it into the meat. Warm, but do not boil.
  6. Serve over cooked noodles.
  7. Do not freeze leftovers.
