Whole Wheat Flax 'n Apple Muffins Recipe #115939

SERVES 12

  1. Preheat oven to 400°F.
  2. Grease muffin tins.
  3. Blend flax seed, both flours, sugar, baking soda, baking powder, and salt in a bowl.
  4. In a separate bowl, combine egg, oil, and milk.
  5. Add the flour mixture to the egg mixture and stir just until blended.
  6. Fold in apples and nuts.
  7. Fill muffin tins 2/3 full and bake for 18-20 minutes or until top springs back when touched.
