Raw Lemon Miso Salad

A healthy salad from the food/fitness/life blog, Heather Eats Almond Butter http://heathereatsalmondbutter.com/ I have not tried this, posted for safe keeping.

SERVES 1 (change servings and units)

Ingredients

  • 4-5 cups mixed greens (I like spinach)
  • 2-3 summer squash, chopped into thin strips
  • 1/2 avocado
  • 1 tablespoon unpasteurized miso
  • 1-2 garlic cloves, minced (optional)
  • 1/2 lemon, juice of
  • 1/2 stevia, packet
  • salt & pepper

Directions

    Place everthing in a large bowl and massage with hands until creamy.

    Stir in favorite raw veggies (chopped mushrooms, tomatoes, bell pepper, carrots, jicama, etc.).

    Enjoy!
