From "The Pheasant Inn" in Cumberland. A traditional English dessert. They are usually made a few hours in advance to let the liquid and cream seperate.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Whip cream until it is thick.
  2. 2
    Fold in powdered sugar.
  3. 3
    Place rasperries and water in a pan and allow to "stew" over low heat for a few minutes. Turn off and let cool.

    Whip egg whites 'til stiff peaks form. Fold into cream mixture.
  5. 5
    Gently fold raspberries and wine into cream mixture and spoon into champagne glasses.( Actually, any glass will do).
  6. 6
    Decorate with raspberry and leaf.
  7. 7
    Serve.
