Raspberry Meringue Bars

Here is a very simple dessert that can be made up in less than an hour - it's great for an easy after dinner dessert!!

    Preheat oven to 325°F
  2. 2
    Cream together butter, almond paste, 1 egg, and brown sugar. Mix flour and salt until crumbly. Press dough into 9x12 baking dish.

    Bake for 20 minutes. Remove from oven. Spread with jam.
  4. 4
    Beat egg whites until foamy. Gradually add sugar and beat until stiff peaks form. Fold in coconut.
  5. 5
    Spread meringue over jam.
  6. 6
    Bake another 20 minutes. Cool before cutting.
