Rasberry Balsamic Chicken

Great recipe that I found in a low-fat cook book (Can't remember which one...). This goes great with wild rice for a side.

SERVES 4 , 4 chicken breasts (change servings and units)

Ingredients

Directions

    heat oil in saute pan on medium heat.

    Sprinkle chicken breasts with thyme.
  3. 3
    add red onion and chicken breasts to pan.
  4. 4
    cook chicken breasts about 7 minutes on each side, or until no longer pink in the center.

    remove chicken breasts.
  6. 6
    Add salt, rasberry preserves, balsamic vinegar and black pepper to the saute pan.

    simmer on med-low heat for 10 minutes.
  8. 8
    To serve, pour rasberry glaze over the chicken breasts and enjoy!
